    An excellent coffee!

    This is an excellent italian style of roast coffee. It is good enough to drink it straight and in fact this was blended for straight espresso drinking. It will require a bit of temperature controlling to bring out the best taste but it is worth it for sure. Also, note that the new size is 12 ounces not one full pound like previously.

    Vivace Espresso Dolce Coffee

    I've been drinking Vivace Espresso for over 20 years. It is the best espresso I have found any where. Nothing else comes close. It keeps my La San Marco 85 very happy.

    Dolce, Smooth and chocolatey

    Very good roast. It's very smooth and chocolatey as an espresso shot, following other's guidelines of 18-19g @ 203F in a double basket. It performs great in milk drinks with about 8-10oz to balance out the intensity of the espresso itself. I also brewed it using a Clever Coffee Dripper and produced good results, more mellow, but same great flavors as espresso. I didn't taste much of any acidity in either brewing method. If your taste buds tend towards more to bitters, chocolate, and caramel flavors, this roast is exceptional.

    I love this coffee it is my favorite. It was shipped and arrive in 4 days. you guys are great! your prices are lots better than other coffee on line latta companies. The coffee is excellent! Lots of creama and no bitter taste with a hint of chocolate. I have a gaggia unica that is an automatic and it makes the perfect expresso and it taste great with milk to for a latta. Had this coffee in 2008 and had to do some digging to remember it. Glad it has a unique name so I was able to find it. Would highly recommend 5 stars!

    Never Disappoints!

    I love Vivace...still holds a special place in my heart after I have tried over 15 different other espresso blends and single origins. The taste is very distinct but not overpowering. It does a great job holding up to milk as well! I can wait to try this in my new ZPM Espresso machine coming in a few weeks!!

    Easy Espresso

    I really enjoy this blend. I have ordered it several times as it was my go to blend, meaning I would try several other blends and then go back to this. I found that this blend was easy to freeze and keep on hand when I ran out of other beans.

    10 x better than Starbucks

    This Espresso is amazing!! I have completely given up on Starbucks and now make my own lattes and iced coffees at home. This has a wonderful flavor and has a nice rich cream at the top after brewing. Perfect!!

    excellent, but also first

    This was my first order from roaste, and it has been excellent, but is that because it is truly the best roaste has to offer or are there tasty surprises yet to come? I don't know. Can I remove stars later? I don't know. But still, the cups I've pulled form these beans have been excellent. No complaints here. My wife has been loving it too.

    i personally wasnt a huge fan. its had a good silky texture to the drink, but i didnt really care for the taste. i used it in a french press. maybe its better suited for other methods.

    Oh my...!

    Wow-zers, this stuff is amazing. Super smooth and creamy, I'm a huge fan. Very rich and appropriately strong, this bean and it's complementary roast are a fan-favorite around these parts. A+ espresso.

    Vivace Espresso Dolce

    Dark chocolate and a little bit of a spicy aftertaste that lingers. I dosed 18 grams into my Gaggia Classic and did my best to go for a hotter extraction. Dolce seemed to be more picky than other blends but it was great when I got it right. Apparently this blend is designed to stand alone but I really enjoyed it in milk drinks as well. I love the packaging too- the two resealable 8 oz. bags with one way valves are great.

    My favorite

    I love Vivace's Dolce. I've been drinking it for years. I've tried other beans, but I always seem to come back to Dolce. Dolce results in an espresso that is very smooth with hints of chocolate.

    Good but maybe not for everyone

    After spending about 2 weeks with Dolce, it seems like Dolce's a very low toned "dark chocolate" profile. There's almost no/very little hint of fruitiness, with an evident presence of Sumatra earthiness, even pulled at ristretto range, after many days of rests. However, the body with the crema and sweetness are just fantastic. The color of the crema was rusty red which is just beautiful. The only reason it didn't get a 5 cup from me was because of the earthiness that I dislike in my espresso shots. I have no problem accepting that in brewed coffee though, or little hint of earthiness in shot. But because the intensity of the earthiness made me felt like I am tasting Sumatras. It would be greater if the earthiness was less pronounced. It does a good job in milk drink though.

    The coffee seemed a little

    The coffee seemed a little over roasted, as there was slightly too much bitterness in the finish, but overall it was a good one. Probably would prefer a lighter roast for espresso but I would get it again.

    Vivace Espresso Dolce

    Perhaps one of the best blends to drink in a cappuccino. This espresso is sweet, and I mean that very literally. If you pull this shot correctly, you should be tasting coffee, chocolate, and caramel. That said, I wish it were a bit more complicated on the palette. For what it is, though, it may just be the best.

    Vivace Espresso Dolce

    I do like this espresso and would recommend it to anyone. It's good as a stand alone or in a cappuccino. The only issue I have is that the packaging does not retain its vacuum seal which is desirable for longer freshness before opening.

    The best I ever tasted

    I have visited Vivace in Seattle and I liked, well pretty much everything. I bought two pounds from there and when I came home I got used to the real deal, so nothing satisfied me. Great crema, balanced flavor. The only espresso I could drink without milk. Cheers everybody

    Nice bean!

    Expresso Dolce

    Brewed on an Ascasso Professional with PID. Set temperature: 205F, falling to 196F by conclusion. Smooth, full-bodied with a more mellow finish than the Expesso Vita. Deeper 3D experience compared to Klatch house expresso.

    Fantastic Coffee

    Wow! Just wow!

    I have never made a better espresso than with these beans. Taste is bold with a definitive chocolaty finish. Crema is nice and thick, but not too foamy. I have tried it as a straight shot, in a latte, an americano and a cappuccino. Absolutely going to buy this again.

    Vivace Dolce

    I did not enjoy these beans as much as I had hoped, but it could take some more dialing in before I get the best experience. The smell of the whole beans is not great, and neither is the extracted espresso. The taste improved remarkably about 7 days after roast and is still pretty solid now at 13 days past roast. I can appreciate that!

    Vivace espresso dolce coffee

    OK, a little pricey by coffee standards, but I always have a new bean first as an espresso to see the taste quality on its own. The Vivace is beautiful, nice crema, very tasty. Some darker chocolate taste, with a bit of almond, cinnamon and spice. Great for cappucinos and lattes, and I will definitely buy this one again!

    Vivace Espresso Dolce Coffee

    Recently bought a new Gaggia academia machine and three of the highest rated coffees from this site. This is my favorite of the three. Very smooth, lots of complex flavor notes, like the chocolatey after taste. Definitely a winner. Works great with my new super auto espresso machine.

    Dolce

    This was one of the first third wave blends I tried on my equipment (which at the time was a Nuova SImonelli Oscar and a La Pavoni Jolly). The result was a sweet shot that is reminiscent of a lot of other blends that attempt to mimic Northern Italian espresso. I enjoyed it as a cappuccino, but any nuance to this blend was lost in a latte. It was defined by its dark chocolate accents.

    Really nice

    I started using a cold brew method to make my own coffee since I only drink it iced. I had been experimenting with a number of roasts. I bought this because I had a gift certificate, and it didn't disappoint. I thought it was rich, well-balanced, and just perfect for what I needed. My purchase came in individual, sealed bags (I think I ended up with 6 total). I kept one out at a time and place the remaining bags in a freezer zip-loc bag and placed THAT inside a paper bag, and stored it all in the freezer until needed. Just opened the last bag last night, and the aroma and taste were still right there. Great coffee.

    Superb!


    Very nice coffee here - thick crema from day 5 (and counting) with my Gaggia. I notice I had to move my grinder two notches coarser to get the flow I like since I have been loading light roast S.O.'s lately. The taste is smooth with excellent body and a dark chocolate and nut taste going on. Easy to work with, seems to get better every day so I am not sure when it peaks - I am eleven days post roast as I type this. I do like the split bags too - one is in the freezer so I can enjoy this taste again in a couple weeks!

    I just bought a new machine and have only had 2 different roasters so far. The Vivace Espresso Dolce has been great. Not one sour shot yet. I like that they still give you a pound rather than 12 ounces.

    Dolce: easier to work with than expected

    This coffee has a bit of a reputation for being fussy in terms of the temperature it likes, etc. I haven't found that to be particularly true. As a novice mucking about with these beans using an old, no-frills Gaggia Carezza, I had no trouble getting great shots. During the second week post-roast I thought Dolce's flavor was actually improving (YMMV, of course). Thumbs up! A few more random observations: (1) A pound of this coffee still ships in two half-pound bags (see here: http://i269.photobucket.com/albums/jj72/jbviau/photo-20.jpg). I put one straight into the freezer and tore into the other. Very handy. (2) This coffee makes a passable press or pourover cup also, surprisingly (tasty but flat in terms of acidity).

    Great coffee, great delivery

    The coffee was every bit as good as you'd expect based on Vivace's reputation. My 2lbs came in 4 eight-ounce zip bags with one-way valves. They reached the east coast 3 days after I placed my order. I got them 2 days after they'd been roasted. I'll definitely be ordering them again.

    A great tasting espresso

    A really great tasting dark roasted bean, with a very full flavor and smell. Definitely has a richness that I haven't experienced with illy pre canned. Had a hint of chocolate which was pleasant to the espreesos and cappuccinos I drink. The only thing I don't like much is the beans are pretty oily, but I suppose thats supposed to be expected with a dark bean.

    Dolce (Cafe Vivace)

    I'd expect nothing less than elegant espresso coffee from an American espresso icon, David Schomer. This iteration of his signature blend is smooth and buttery, with excellent body and rich crema. You might want to tighten your grinder a bit. I'd recommend at least 5 days rest post roast before pulling straight espresso shots, but i snuck a cappa after 3 days (the coffee smelled so good when it arrived) and it was delicious as a milk drink. It only got better. I still had beautiful shots 12 days post roast. Roaste did a fine job, as I expected they would. great service all the way around. The website is quite easy to explore and order from. 5 stars for all.

    Wonderful for espresso

    Huge amounts of crema and an amazing amount of body. A nice just dark enough roast so the flavor is just the coffee and not the roast -- and dark enough for chocolate notes and the wonderful body/mouth feel. You can get shots that look like they were pulled by some master barista just by playing around. Very forgiving (where the large amount of body and crema come in).

    Great as an Americano

    This is an especially hard coffee to brew correctly, but once you have it figured out (and it takes a lot of wasted coffee to do so), you're rewarded with a brilliantly balanced cup of coffee with notes of caramel in the finish. Brew at 203F using a very fine grind to produce 1.25oz at 25 seconds.

    Vivace Espresso Dolce Coffee

    I received an espresso machine for a birthday gift recently and had to find the right coffee for it. A friend suggested I check out your web site. I ordered the above coffee on line and was amazed at the excellent service; easy ordering and quick response. I have only had occasion to use the coffee twice, but both times it was excellent.     Comfort food

    Best way I can describe Dolce is as a comfort food good traditional choclate and caramel flavors in this blend of espresso. Has a slight medicine taste if your brew temp is too high but with recommended brew temp of 203.5 you have lots of headroom so its easy to avoid. Other people say this blend is tempermental but I find it the easiest by far to get a good tasting cup from.

    Vivace is the best

    Unfortunately, I realized

    Unfortunately, I realized too late that this coffee actually would be much easier with the single basket on my equipment (Gaggia Carezza / Ascaso i-mini). The double shot always was a little tricky, and tended to become bitter. When I only had a couple beans left in the hopper, I tried the single basket, and this last single shot of Dolce was the best shot I got out of this batch... Overall, it's a nice every-day espresso. I didn't like it so much in cappuccino/latte.

    I know many folks have great success with Dolce but it just didn't come together for me. I consistently got off flavors, very well could be my technique, just calling it as I see (taste) it.

    very woody

    So far my favourite

    I like it, I get really thick crema and great taste, seems a lot more forgiving that the other blends I've tried so far. For the most part I am able to consistenly pull great shots with the QM Alexia and it was fairly easy to dial in the grinder.

    A new favorite

    Ordered it on Thursday and received it on Monday, fast for snail mail coming from Washington State to the east coast of North Carolina. Couldn't wait to try it so I opened up one of the bags and ground enough for two double shot and what a wonderful taste since I drink straight shots. For now I've got a Gaggia Baby but hope to upgrade within the next year to get either a Quick Mill, Fiorenzato Bricoletta or a Vibiemme Domobar Junior. I've got a Cimbali Junior grinder so I'm set there. I've decided to try the Dolce from what I've read at other sites, up until now I've been drinking Espresso Rustico from Counter Culture which is also great for straight shots.

    Not my favorite + Finicky

    I've brewed about 5 pounds of Dolce in the past year or two, all on my Quickmill Alexia PID, with a Macap M4 grinder. I primarily drink americanos. Each time I ask myself "what's the big deal with Vivace" because honestly I don't find it all that exciting. I think it's a good bean for a person that likes an italian style shot of espresso, and perhaps at the hand of a very experienced barista. I've found that it's more difficult to get this bean perfectly dialed in. Slight variances in technique result in bubbling at the handle. To provide a frame of reference, I primarily brew Cafe Ladro Espresso blend. To me it's very enjoyable as an americano, and also forgiving to work with.

    Enjoyable

    I loved the packaging! The half pound bags make this easy to order in bulk and put away for later. I was pulling this on a Gaggia Classic with a Baratza Maestro and didn't feel like I quite got it dialed in. With a little rest the beans got better. My wife commented multiple times that her morning lattes had the best "coffee taste" yet. We'll likely order this again if it goes on sale. Definitely worth trying as you find your espresso bean of choice.

    Some off flavors, but very good overall

    Pulled using a Compak K-10 and Elektra A3 at aprox 200 deg. Chocolaty with some leathery rustic flavors. Better with Milk

    Very good espresso

    I found that brewing this at 202 deg F with a 14 g dose provided a very good shot. Nice body with a bittersweet finish. Definitely a favorite!

    Dolce

    This was a little "finicky" with my equipment, as others have said, but less so than Vita. I drank this mostly as straight espresso, and more often than not the shots were smooth and sweet with lots of crema. The small bags are cool and the shipping was speedy. Will order again.

    Vivace Dolce

    I don't feel I've gotten the best of it - I don't usually use milk or sugar but after reading a comment on H-B I tried a shot with a little sugar and maybe an ounce of warm milk (I haven't learned to steam properly) and it was interesting, a kind of mild cheese flavor in there, I imagine properly textured milk would have made it very nice . The texture I've gotten for shots is more frothy than syrupy.

    Getting Better

    I love the fact that they ship it to you in 2 8 ounce bags. And the bags are cool too. It seems to be getting better the longer it sits. Lots of Crema it is just under a week. I am not sure about the resting of the bean thing. Is it that important. Please someone let me know. This maybe one I get all the time. Well see. I am waiting a little while now and this seems to be helping flavor. I will buy this roast again.

    Vivace Dolce

    It seems the vivace produces a more rich dark speckled crema than other popular blends I've tried and seems not to blonde as quickly during the pour. I drink latte's which often mask the subtle coffee flavors and the Vivace's taste seems to cut through the milk very well.

    Difficult to get right

    I was excited to try this coffee. Now that I've read some other reviews I see I'm not the only one that thinks this one is touchy. I've gotten some OK shots and some bitter ones. Still trying to get that perfect one for the "dolce" flavor. Strength is somewhere between medium and robust but anything else is hard to discern yet. I've got the rest of my two bags to get it right. Perhaps because I have a heat exchanger machine it will be difficult to tweak the brewing. Open to suggestions...

    Excellent as a shot, not as good mixed with milk

    I typically drink espresso with milk in latte form and didn't care for this espresso when mixed with milk. HOWEVER, when I drank a plain shot (with a tiny bit of sugar) it was excellent!! I just may start drinking more espresso as a plain shot!

    Nice for Cappucinos

    I like this blend a lot. I think I may like Vita a little better, but this blend worked really well in milk drinks (short cappucinos). It needed about 6 days rest to really shine. I tried it starting at 4 days and felt it needed to rest a little longer. Try bumping the temp up a little for smoother tastes. I also really like that they ship in two half pound sealed bags. Nice touch.

    Finicky bean

    I was excited to try this roast, as I'd heard good things. I'd also heard that it's very particular, and now I must say that I agree. Many of my shots ended up bitter, with only a few of them living up to the namesake of Dolce. I wanted to like it, but can't say that it agreed with my setup as much as some other blends. I really liked that it came in 2 half lb bags, and that I received it within two days post-roast - just couldn't get it to shine on my setup.

    Great Espresso Beans

    You have to try it for yourself

    After reading about the recent espresso shootout on home barista, and how finicky the Dolce is I had to try it out for myself. Needless to say, I was not disappointed. I liked mine at 202F, 17,5g dose for espresso. Seems more palatable and forgiving in milk drinks. Got my order within 2 days of roast date and love the two separate 1/2 pounds bags that the beans are packaged in.

    another great espresso

    I didn't want to love Dolce expecting it to be more about the name than the coffee, but I do love it. It needs to be pulled hot and at least 17g's, but when you pull it right (which I think isn't that hard in spite of its reputation) it is unique and quite delicious.

    Truely an experience

    Wow is all I can say. The flavor profiles I have got with this Dolce is amazing. I also love that it came packaged in 2 - 8oz. pressure release bags. Will definitely order again. I think I have a new favorite bean!

    Good blend

    This was my first time trying this blend. I heard good things, but never tried it before due to cost. Roaste solved the price problem. The blend is nice, I dose about 18 grams for a 25 second pull that results in about 1.5oz of espresso. Nice and sweet (caramel and toffee) with some fruity acid (light berries). I also got some for my dad and he really enjoyed the blend too. The blend works well with milk drinks, but I prefer something with a little more acid.

    Dolce- among the best around

    Truly an outstanding blend. Slightly updosed double basket and a higher than normal temperature yielded a very very good straight shot or macchiato. Body and taste were excellent, though tailed off about eight days post-roast. While many people have commented elsewhere that the temperature window is fairly narrow, it did not seem that picky, though, perhaps I happened to get lucky. Initial brightness and bite goes to full chocolate/nuts with a lingering, tongue coating finish.

    Vivace Dolce

    Doing business with Roaste is a pleasure! Always a very fast ship. Ordered coffee on Sunday, roasted on Monday, at my house in Virginia on Wednesday. This is a very good espresso blend. For those who like a chocolaty, carmel blend-this is for you. In a latte it tasted like a Milky Way bar.

    Dolce is nice

    Dolce is very nice as a change to my usual Belle. It is very forgiving and seems to do best for me at 18-19g in Synesso double basket, 203f, 1.75 oz in 30 seconds. I am getting a nice rich chocolaty sweet syrupy flavor. I will definately order this one again. Thanks to Roaste for the great service and price considering the free shipping.

    Great espresso. If you prefer milk based espresso drinks Vita is probably even better. Fast shipment so you may get fresher coffee than from the local roaster.

    Great service through Roaste. shipping to Atlanta was super fast. I think I started using beans way too early... espresso seemed to best around 8 days past roast. I used 18gms, triple basket at 203 degrees on my expobar III (which I read were vivace recommendations). Now that I have a better handle how many days to wait post roast I will order more beans and try again.

    Vivace Dolce

    Ordered one day, shipped the next, traveled cross country and received on the 3rd day. Doesn't get much better! Pulled shots at 203, 17g. Just fantastic. Chocolate and carmel, as a cap it is almost like a hot chocolate. I will buy more!

    Vivace Dolce

    This is a VERY good espresso blend. One thing about it, it NEEDS high temps.. David Schomer Suggests 203.5F for this blend.. higher then most any of the popular espresso blends from other Top Tier roasters. But, if you have a machine capable of consistently hitting this temp(or as close to it as possible, ie: +/-.5F, then you will be rewarded with a shot as thick as pure melted chocolate, that tastes like chocolate, caramel, creamy almonds and hazelnuts, and a SLIGHt fruity presence. But most of all, the sweetness is out of this world. By far, the sweetest espresso Ive ever had. This blend is desinged to be pulled at higher temps, high doses, and a high extraction ratio. Or, simply put, updose and pull ristretto. I was pulling about 1.5-1.75oz in 30-35seconds, with AND w/o pre-infusion.

    Vivace Espresso Dolce

    I thought my other coffee was extremely good. And it is. Then I tried Vivace Espresso Dolce - from the reviews actually. I was not disappointed. It gets better with each cup and I do drink it as a first cup in the AM. It is subtle but with definition that gets better as I drink it more regularly. Whose to know - I might try it as demi tasse? 5 Thumbs Up!

    Vivace Dolce

    Awesome, awesome espresso blend. I really love this coffee and will most definitely be a repeat buyer of it through Roast-e! I ordered on a sunday, and it was roasted wednesday and I received it on Wednesday across the country in RI! If you love ristrettos, you will absolutely love Dolce... It just isn't quite as good when dialed in for a normal double shot - I kept mine to between 1 and 1.5 oz and loved it :)

    Vivace Dolce

    I ordered my beans Mon. morning and they were delivered on Wed., wow 2 days from the west coast to Wisconsin. They were roasted on Mon. so I waited until Fri. to try them. The beans where alittle oily so grinding them in my Baratza Vario the grinds flew around more than most beans I grind. Shots of espresso were a fantastic deep redish brown with lots of crema. Straight shots of espresso were mellow and creamy tasting with hints of like cedar, didnt taste any chocolate or cherry flavors so not my favorite straight espresso. But a double shot cappacino 6oz. cup it was one of my favorites to date so I will definately be ordering more. I also ordered the Vita, which also was oily and I thought was very similar to the Dolce. Rated 4/5 due to the oily beans.

    Gobs of crema

    Flavor improved after a week, as others have mentioned. The valve bags are a bit thin, but better than the paper bags they used to use in the past.

    Ooh la la, Vivace Dolce.

    In the past 5 years of making espresso at home, Vivace has for some reason eluded me and I'm not certain as to why? The blend has forever been praised by many in the coffee community, but for some reason, I never got around to trying it. Some say hit, some say miss, I say Good/Solid Espresso. My experience with the blend: Upon receiving the shipment I noticed that the Dolce arrived in 2 separate, plastic, 1/2 lb valve bags. I can honestly say that I never received a bean shipment in this type of packaging before, but I figured let's let the beans do the talking. I let the beans rest an additional 4 days after roast, prior to opening. The shot poured and gushed entirely too fast and it was only then that I realized, Dolce needed more time to rest. I did this for the next couple of days and found that the beans needed a solid week before it could start to perform as it should. Once dialed in and after the weeks rest, Dolce performs very well and tastes great. I find that the blend requires some fine tuning and is not as forgiving as some other blends that I'm accustomed to. It likes to be pulled with a really fine grind and updosed. Makes solid doubles. Still experimenting with triples. Tastes just ok in milk, I think Vivace Vita is probably the alternative to milk based espresso. Would I purchase the blend again? Absolutely. I'm up for the challenge and look forward to experimenting with this reputable blend. Great Value from Roaste and very fast shipping.

    Yum.

    First off, shipping was incredibly fast. The roast date was 3/22 and the beans arrived on 3/24. I was out out of town for a couple days, so the beans had some time to off gas. I really like the 1/2 pound bags, perfect size for my container, so the rest will remain sealed until I need more. My first shots were really good. Then I adjusted the temp a degree and got even better results. I was pleasantly surprised by the mouth feel and natural sweetness, and it was amplified when I made my first latte this morning. I think I will be adding Vivace Espresso Dolce to my regular line up. Update: Just tried a slightly heavier tamp in an attempt to get a 25-28 second pull on a double with enough fresh ground to qualify as a ristretto. Wow. After 6-7 seconds and nothing coming out, I was reaching for the switch to shut down and out came this amazing crema, like something out of a YouTube video, into MY latte cup. How freakin' cool is that? I frothed 200 ml of 2%, and just experienced a very rare moment with machine and bean. Dolce rocks.

    Vivace Dolce - Black Cat Perfected

    A recent trip to Chicago introduced me to the world of Black Cat Espresso. It was a complete revelation in espresso crema. Never had I seen such richness in my glass and with such ease. But this excitement was quickly surpassed by Vivace Dolce. After tiring of long drives and waiting 10 minutes or more in line to buy days-old bags of beans, I searched the internet for alternatives. How lucky was I to have stumbled upon several postings recommending Vivace Dolce. Dark, spicy chocolate with a thick, opulent head of crema appeared -- you'd think I pulled a godshot. I was hooked! Another reviewer compared it to the chocolate mousse of coffee and he's not far off, although I enjoy a Dolce latte far more than chocolate desserts of any type. For an easy comparison of tastes between you and I - I'm not a straight espresso drinker. Never been able to even take more than a sip of a macchiato, so all my reviews are based on taste within lattes or other milk-oriented drinks.

    balanced and delicious

    Dolce seemed very forgiving to my technique and machines. I have a PV Lusso and a Gaggia, with moderately updosed doubles (15 g for the lusso and 18 for the gaggia) and aiming for the hot side on temperature, dolce was delicious. Dolce had great floral notes at ~4 days rest, and became more balanced with more chocolate as it aged.

    Dolce may shape up to be my new favorite espresso blend. Today marked five days post roast, so I spent some time dialing it in. It seems to be a little touchy with temperature, but once I got within a good range, there were a lot of good notes coming through. At the lower end of the temp spectrum, I picked up some fruit, but the acidity was a little high for my palate, at least as a straight shot. The higher temperatures (around 203 F) were definitely more rewarding to me, with some great chocolate and caramel coming through, and significantly better balance in the cup. I also tried a 200 F shot (more fruity, a little more acid to it) as a cappuccino, and goodness was that terrific. ROASTe got it to my door two days post roast, so I was disappointed I had to wait so long to try it out, but the free, fast shipping is something I simply can't complain about.

    Vivace Espresso Dolce

    I just opened my first 1/2lb yesterday after 7 days rest. Pulled a shot at 199*f & believe me you don't want to go there. Bumped it up to 202*f & got a dark chocolate shot but it still tasted off. Today (day 8) I pulled two very nice 20 gram triples at 203.5*f & got spicy dark chocolate with a very pleasant, lingering sweetness. Could have been the extra day or the higher temp. Definitely a grinder friendly blend. Get it in the ballpark & you will get some of the most beautiful, Espresso porn quality pours & crema you will ever lay eyes on. Overall a very nice "dark chocolate/comfort food" espresso. If you are looking for fruit; look elsewhere.

    As a March 22 addendum I would like to thank Roaste for the $11.40 coffee bucks that I earned. I used it this morning when I placed my second order for three pounds of Dolce. Dolce is the most consistently pleasing coffee that I have ever used and this same feeling is shared by my wife and neighbors. Dolce took awhile to dial in properly on my La Marzocco GS3 paddle machine. 17gms in a triple basket/bottomless portafilter at 203F delivered a 25 second pull with extraordinary crema and flavor depth. Before Dolce I was using Black Cat which quickly fell to number two position after Dolce. I think the differences are the Dolce excels in flavor depth leading to a longer full flavor at the end. The flavors are complex but balanced. I am not very good in using all the related flavor terms but when I run out of it I become cranky until I get some more. ROASTe made the acquisition of Vivace Dolce much easier with their free shipping promotion. I have complained to Vivace several times about their excessive shipping costs without any luck. I look forward to trying other roasters on ROASTe as well.

    Classic Espresso

    I found the Dolce to be very mellow and user friendly. I wouldn't say it is complex, at least to my taste, I do however find it to be the type of espresso you wouldn't mind pulling shots of daily. It is very well rounded with a clean, balanced taste. Exellent body with velvet crema. Does well as a straight shot and good in a small latte/cappa. I found the taste to be more on carmel side than chocolate. FWIW, I also enjoy Redline and Palermo.

    A little disappointing. When I was in Seattle back in the late 90s I remember the Vivace street carts still being around (before evil empire of Starbucks ran them out of business). Probably the best latte I have ever had. Have not tried Vita yet but Dolce seemed a little lost with milk. Excellent as espresso.

    but it can be quite the Diva - I second the previous poster - I went through half a pound before I had something palatable and another half pound for the first 'god shot' - I do not know of another roast that will go from great to sink with such a small margin of error - miss the temperature by a couple of degrees and you are toast....I have exactly two micro-settings on my vario to go from choking the machine to 3oz in 15 seconds.... 203 deg, 16g in naked double tamped with 40pds, 30 sec for 1.6 oz (giotto premium plus HX-E61)

Then I adjusted the temp a degree and got even better results. I was pleasantly surprised by the mouth feel and natural sweetness, and it was amplified when I made my first latte this morning. I think I will be adding Vivace Espresso Dolce to my regular line up. Update: Just tried a slightly heavier tamp in an attempt to get a 25-28 second pull on a double with enough fresh ground to qualify as a ristretto. Wow. After 6-7 seconds and nothing coming out, I was reaching for the switch to shut down and out came this amazing crema, like something out of a YouTube video, into MY latte cup. How freakin' cool is that? I frothed 200 ml of 2%, and just experienced a very rare moment with machine and bean. Dolce rocks.

    A recent trip to Chicago introduced me to the world of Black Cat Espresso. It was a complete revelation in espresso crema. Never had I seen such richness in my glass and with such ease. But this excitement was quickly surpassed by Vivace Dolce. After tiring of long drives and waiting 10 minutes or more in line to buy days-old bags of beans, I searched the internet for alternatives. How lucky was I to have stumbled upon several postings recommending Vivace Dolce. Dark, spicy chocolate with a thick, opulent head of crema appeared -- you'd think I pulled a godshot. I was hooked! Another reviewer compared it to the chocolate mousse of coffee and he's not far off, although I enjoy a Dolce latte far more than chocolate desserts of any type. For an easy comparison of tastes between you and I - I'm not a straight espresso drinker. Never been able to even take more than a sip of a macchiato, so all my reviews are based on taste within lattes or other milk-oriented drinks.

    In the past 5 years of making espresso at home, Vivace has for some reason eluded me and I'm not certain as to why? The blend has forever been praised by many in the coffee community, but for some reason, I never got around to trying it. Some say hit, some say miss, I say Good/Solid Espresso. My experience with the blend: Upon receiving the shipment I noticed that the Dolce arrived in 2 separate, plastic, 1/2 lb valve bags. I can honestly say that I never received a bean shipment in this type of packaging before, but I figured let's let the beans do the talking. I let the beans rest an additional 4 days after roast, prior to opening. The shot poured and gushed entirely too fast and it was only then that I realized, Dolce needed more time to rest. I did this for the next couple of days and found that the beans needed a solid week before it could start to perform as it should. Once dialed in and after the weeks rest, Dolce performs very well and tastes great. I find that the blend requires some fine tuning and is not as forgiving as some other blends that I'm accustomed to. It likes to be pulled with a really fine grind and updosed. Makes solid doubles. Still experimenting with triples. Tastes just ok in milk, I think Vivace Vita is probably the alternative to milk based espresso. Would I purchase the blend again? Absolutely. I'm up for the challenge and look forward to experimenting with this reputable blend. Great Value from Roaste and very fast shipping.

    Flavor improved after a week, as others have mentioned. The valve bags are a bit thin, but better than the paper bags they used to use in the past.

    I ordered my beans Mon. morning and they were delivered on Wed., wow 2 days from the west coast to Wisconsin. They were roasted on Mon. so I waited until Fri. to try them. The beans where alittle oily so grinding them in my Baratza Vario the grinds flew around more than most beans I grind. Shots of espresso were a fantastic deep redish brown with lots of crema. Straight shots of espresso were mellow and creamy tasting with hints of like cedar, didnt taste any chocolate or cherry flavors so not my favorite straight espresso. But a double shot cappacino 6oz. cup it was one of my favorites to date so I will definately be ordering more. I also ordered the Vita, which also was oily and I thought was very similar to the Dolce. Rated 4/5 due to the oily beans.

    Awesome, awesome espresso blend. I really love this coffee and will most definitely be a repeat buyer of it through Roast-e! I ordered on a sunday, and it was roasted wednesday and I received it on Wednesday across the country in RI! If you love ristrettos, you will absolutely love Dolce... It just isn't quite as good when dialed in for a normal double shot - I kept mine to between 1 and 1.5 oz and loved it :)

    I thought my other coffee was extremely good. And it is. Then I tried Vivace Espresso Dolce - from the reviews actually. I was not disappointed. It gets better with each cup and I do drink it as a first cup in the AM. It is subtle but with definition that gets better as I drink it more regularly. Whose to know - I might try it as demi tasse? 5 Thumbs Up!

    This is a VERY good espresso blend. One thing about it, it NEEDS high temps.. David Schomer Suggests 203.5F for this blend.. higher then most any of the popular espresso blends from other Top Tier roasters. But, if you have a machine capable of consistently hitting this temp(or as close to it as possible, ie: +/-.5F, then you will be rewarded with a shot as thick as pure melted chocolate, that tastes like chocolate, caramel, creamy almonds and hazelnuts, and a SLIGHt fruity presence. But most of all, the sweetness is out of this world. By far, the sweetest espresso Ive ever had. This blend is desinged to be pulled at higher temps, high doses, and a high extraction ratio. Or, simply put, updose and pull ristretto. I was pulling about 1.5-1.75oz in 30-35seconds, with AND w/o pre-infusion.

    Ordered one day, shipped the next, traveled cross country and received on the 3rd day. Doesn't get much better! Pulled shots at 203, 17g. Just fantastic. Chocolate and carmel, as a cap it is almost like a hot chocolate. I will buy more!

    Great service through Roaste. shipping to Atlanta was super fast. I think I started using beans way too early... espresso seemed to best around 8 days past roast. I used 18gms, triple basket at 203 degrees on my expobar III (which I read were vivace recommendations). Now that I have a better handle how many days to wait post roast I will order more beans and try again.

    Great espresso. If you prefer milk based espresso drinks Vita is probably even better. Fast shipment so you may get fresher coffee than from the local roaster.

    Dolce is very nice as a change to my usual Belle. It is very forgiving and seems to do best for me at 18-19g in Synesso double basket, 203f, 1.75 oz in 30 seconds. I am getting a nice rich chocolaty sweet syrupy flavor. I will definately order this one again. Thanks to Roaste for the great service and price considering the free shipping.

    Truly an outstanding blend. Slightly updosed double basket and a higher than normal temperature yielded a very very good straight shot or macchiato. Body and taste were excellent, though tailed off about eight days post-roast. While many people have commented elsewhere that the temperature window is fairly narrow, it did not seem that picky, though, perhaps I happened to get lucky. Initial brightness and bite goes to full chocolate/nuts with a lingering, tongue coating finish.

    This was my first time trying this blend. I heard good things, but never tried it before due to cost. Roaste solved the price problem. The blend is nice, I dose about 18 grams for a 25 second pull that results in about 1.5oz of espresso. Nice and sweet (caramel and toffee) with some fruity acid (light berries). I also got some for my dad and he really enjoyed the blend too. The blend works well with milk drinks, but I prefer something with a little more acid.

    Wow is all I can say. The flavor profiles I have got with this Dolce is amazing. I also love that it came packaged in 2 - 8oz. pressure release bags. Will definitely order again. I think I have a new favorite bean!

    I didn't want to love Dolce expecting it to be more about the name than the coffee, but I do love it. It needs to be pulled hot and at least 17g's, but when you pull it right (which I think isn't that hard in spite of its reputation) it is unique and quite delicious.

    After reading about the recent espresso shootout on home barista, and how finicky the Dolce is I had to try it out for myself. Needless to say, I was not disappointed. I liked mine at 202F, 17,5g dose for espresso. Seems more palatable and forgiving in milk drinks. Got my order within 2 days of roast date and love the two separate 1/2 pounds bags that the beans are packaged in.

    I typically drink espresso with milk in latte form and didn't care for this espresso when mixed with milk. HOWEVER, when I drank a plain shot (with a tiny bit of sugar) it was excellent!! I just may start drinking more espresso as a plain shot!

    I was excited to try this roast, as I'd heard good things. I'd also heard that it's very particular, and now I must say that I agree. Many of my shots ended up bitter, with only a few of them living up to the namesake of Dolce. I wanted to like it, but can't say that it agreed with my setup as much as some other blends. I really liked that it came in 2 half lb bags, and that I received it within two days post-roast - just couldn't get it to shine on my setup.

    I like this blend a lot. I think I may like Vita a little better, but this blend worked really well in milk drinks (short cappucinos). It needed about 6 days rest to really shine. I tried it starting at 4 days and felt it needed to rest a little longer. Try bumping the temp up a little for smoother tastes. I also really like that they ship in two half pound sealed bags. Nice touch.

    I was excited to try this coffee. Now that I've read some other reviews I see I'm not the only one that thinks this one is touchy. I've gotten some OK shots and some bitter ones. Still trying to get that perfect one for the "dolce" flavor. Strength is somewhere between medium and robust but anything else is hard to discern yet. I've got the rest of my two bags to get it right. Perhaps because I have a heat exchanger machine it will be difficult to tweak the brewing. Open to suggestions...

    It seems the vivace produces a more rich dark speckled crema than other popular blends I've tried and seems not to blonde as quickly during the pour. I drink latte's which often mask the subtle coffee flavors and the Vivace's taste seems to cut through the milk very well.

    I love the fact that they ship it to you in 2 8 ounce bags. And the bags are cool too. It seems to be getting better the longer it sits. Lots of Crema it is just under a week. I am not sure about the resting of the bean thing. Is it that important. Please someone let me know. This maybe one I get all the time. Well see. I am waiting a little while now and this seems to be helping flavor. I will buy this roast again.
