Metropolis Coffee believes you deserve a good cup of coffee. Owned and operated by father-and-son team Tony and Jeff Dreyfuss, Metropolis does small batch artisan coffee roasting on the north side of Chicago, but they spread the coffee love across the country by shipping coffee that’s roasted to order.
Metropolis lays out its coffee philosophy in uncompromising terms. The essence of coffee is in the tension between the hardness of the bean and the heat of the roaster, between the dense pack of coffee in the machine and the pressure of the water. At Metropolis, they believe that coffee is another word for community, and that coffee, like art, has its own aesthetic. They honor and respect that aesthetic by sourcing every coffee with two parts of community in mind – the farmers who grow the coffee and the customers who are the ultimate audience for their art.
In between, Metropolis seeks out the highest quality coffee beans from farmers around the world, pays farmers a fair price for every harvest, and roasts every bean to bring out its most subtle and nuanced flavors, aromas and textures. Their respect for the land and the farmers and their belief in community makes it a foregone conclusion that all of their relationships with growers must be sustainable and that every partner must treat the earth and every worker with fairness and dignity.
