    Description

    More than half of this farm is located in the Volcan Baru National Park, a protected ecological reserve and sanctuary for exotic plants, birds and mammals such as the tropical tiger. The Baru volcano is one of the highest volcanoes in Central America and covers 7 different climate zones. The coffee is only grown up to 1,850 meters, the highest elevation to grow coffee in Panama. There are several local conditions that set this coffee apart from others. The farm is located at a very high elevation, one of the two highest coffee farms in Panama. It is grown in rich, volcanic soil with a cool climate and a significant amount of fog and mist during the dry season. The coffee trees are surrounded by virgin-native cloudy rain forest, and because of the cool temperatures at night, it takes 2 to 3 years longer than the average coffee tree before these trees begin to produce. The low temperatures also contribute to an extended ripening time by 1 month, creating a more developed coffee bean.

    At Portola Coffee Lab, fine coffee stands at the intersection of art and science. Portola Coffee Lab grew from owner Jeff Duggan’s obsession with the chemistry of coffee, both the scientific chemistry and the chemistry of community, personality and relationship. Quality coffee does not just happen.     It all starts with the bean. The buyers at Portola travel to the ends of the earth to find the very best lots of coffee grown throughout the world. They work deliberately with farmers who practice sustainable and environmentally responsible farming methods and reward them by paying top dollar – always above Fair Trade minimum – for the exquisite coffee beans they produce. Whenever possible, Portola Coffee Lab purchases coffee through Direct Trade, developing relationships that will continue for years.

     

    Portola roasts coffee in small batches, cupping and sampling each roast to bring out the essence of the place where the bean was born. Each coffee is roasted to order, using meticulous measurements and calculations – the science part of the coffee equation, a part that Dugan feels is greatly overlooked by many coffee roasters.

     

    Because Portola believes in traceability, every coffee is labeled with the details of its origins: the variety, the region, the farmer and the elevation.

     

    The offerings from Portola Coffee Lab include meticulously sourced seasonal single origin coffees from the Americas, Indonesia and Africa, as well as espresso and drip blends created to highlight the complexity and nuances of the beans.
